Normandie Eisen & Viljoen 2017 James Sedgwick The distillery uses local ingredientsCrafted from Cabernet Sauvignon, Merlot, and Petit Verdot grown on select blocks of the Normandie estate, the 2017 vintage reflects a near perfect growing seasonmarked by dry conditions, cool ripening temperatures, and optimal day night variation. Grapes were hand harvested in small lots at staggered ripeness levels, then vinified with minimal intervention. Fermentation was spontaneous after a cold soak, followed by extended maceration and gentle
