Restless River Vineyard Selection Chardonnay 2023 35yo produced by Buffalo TraceThe Restless River Chardonnay 2023 was crafted from grapes sourced from newer vineyards, planted between 2017 and 2020, situated in the Upper Hemel en Aarde Valley. The grapes were whole bunch pressed using a Vaslin basket press, with juice naturally oxidised and no sulphites added. It underwent spontaneous fermentation, maturing on its lees for 11 months in older 500 litre Burgundy barrels (5% new oak). The wine was vinified separately from three
